Why Cooking Conversions Matter

Cooking measurement conversions are one of those things that seem simple until you try to do them accurately. The fundamental problem is that recipes from different countries use different measurement systems. American recipes use cups and tablespoons (volume-based), while European and Australian recipes typically use grams and milliliters (weight-based). This creates confusion because the weight of a cup of an ingredient depends entirely on what that ingredient is.

A cup of all-purpose flour weighs about 125 grams, but a cup of granulated sugar weighs 200 grams. A cup of honey weighs 340 grams. A cup of rolled oats weighs only 90 grams. These differences mean that a simple "1 cup = X grams" conversion is meaningless without knowing the ingredient. Volume vs Weight Measurement

Professional bakers almost universally prefer weight measurements over volume measurements. The reason is consistency. When you measure a cup of flour by scooping directly from the bag, you can easily pack in 150 grams or more. When you spoon it into the cup and level it off, you get closer to 125 grams. That 20% difference can ruin a recipe.

US Customary vs Metric System

Gas Mark is a temperature scale used in the United Kingdom, Ireland, and some Commonwealth countries for gas ovens. It ranges from 1 (275°F / 140°C) to 10 (500°F / 260°C). The scale is not linear in Gas Mark 1 is 275°F, and each subsequent mark adds 25°F. So Gas Mark 4 is 350°F, Gas Mark 6 is 400°F, and Gas Mark 9 is 475°F.
